Chinese Chives (100g)
Thai Name: Bai gui chai kao / ใบกุ่ยไฉ่ขาว
This herb has been cultivated in East Asia for centuries. It is however most popular amongst the Chinese in Southeast Asia. Owing to its rather strong smell, it is also referred to as garlic chives. The chives grow in clusters of long flat leaves (hence another name, flat chives) and are used both as herb and vegetable.
As the flavour of Chinese chives is more pungent than that of spring onions, to which they bear a certain resemblance in terms of length and shape, they are generally lightly cooked rather than eaten raw, adding a distinctive flavour to a number of noodle and other dishes.
Bunches of Chinese chive stems with the flowering culm at the tip are sold and cooked as a vegetable before the flower opens. They are used for their onion flavour. These, like the creamy white Chinese chives sometimes found in the market (the latter grown by cultivating the plant under cover), are considerably more expensive than the regular green chives.
