Eggplant / Aubergine (200g)

The Thai eggplant is often used for making curry dishes, soups, stews, egg dishes, or pickled to be served as a snack or side dish.
In a reversal of the more common trend, this is one vegetable native to tropical Asia which was introduced to the Western world. A whole variety of eggplant is found in the tropics; the fruit, regardless of variety, is always much smaller than that of the common European eggplant or aubergine.
The most widespread Asian variety is long and slender, although there are round eggplants raging in size from the tiny pea-like bitter eggplants which grow wild, up to those the size of a tennis ball. All have smooth, waxy skin, in colours ranging from deep purple through pale purple, with pale green, white and even bright yellow-skinned varieties.
Tropical eggplants do not, like their Western counterparts, need salting to remove any bitterness. This is a very versatile vegetable, its somewhat bland flavour lending itself to a whole range of spices and seasonings which transform it throughout Asia.
