Khanom Tuapab is a dessert that is a little bit out of the ordinary. It is made using the mung bean, which is commonly used in Chinese cuisine. Their sprouts are often used to make a soup or in the case of the Philippines it is added to a meat dish with garlic and onions. They are also used to make a soup in the Philippines called ginisang monggo, which is mung bean soup and is cooked with shrimp and served with tomato and smoked fish. Mung beans are regularly used in many cuisines throughout Asia and they are used mainly in soups and desserts.
In Thailand, the mung bean is added to coconut, sesame seeds, sugar and salt to give the delightful dessert known as Khanom Tuapab. To enjoy this dessert, it is really easy to make and the ingredients are simple to find. The ingredients are 250g of glutinous rice flour, 200g mung beans, 2tbsp roasted sesame, 2tbsp sugar, 1 tbsp of salt, 200g scraped coconut fruit, 1 cup of concentrated pandaus juice.
To start, you need to soak the mung beans overnight or let them soak in warm water for 4 hours. When they are ready, then steam them from between half an hour to 50 minutes and then steam the coconut fruit for 5 minutes. Take the coconut fruit and add 1 tbsp of salt then mix with the mung beans and place the mix on a plate.
Take a bowl and mix the panadaus juice with the glutinous rice flour. Add the juice little by little as you knead the mix. Mould into a small ball similar to a golf ball. Place the ball into a pot and bring to the boil. It is ready when the ball floats to the surface. Put it in cold water and the dough will form easily and then place it flat on the plate and add the filling. Close it over and add mung beans to the top as well as a topping from the sesame seeds, sugar and salt.
