Mae Ploy Green Curry Paste is the base for a typical Thai green curry. It gets its color from the green chilies which are ground together with the other ingredients as well as shrimp paste.
The paste can be mixed with coconut milk, to make the curry base. The consistency of the curry depends on the amount of milk. It is a very hot curry although it is sweeter than the other curries in the range such as red or yellow. It contains chili, lemon-grass, garlic, salt, shallots, galangal, kaffir lime peel and coriander seeds as well as other spices to add to the flavor.
The typical Thai Green Curry contains aubergine or egg plant split in half which add to the sweetness. The egg plant bursts with flavor and is a great addition. There are many different ingredients which you can add to the curry such as pork, chicken, beef, tofu, vegetables or seafood such as prawns. You can eat it with Thai jasmine rice, noodles or on its own as a hot/spicy soup.
The paste can be used for the base of a Thai Green Curry soup. Make it with more coconut milk and it can be less spicy due to it being more diluted. The paste could be made with a small amount of coconut milk which then can be added to fried rice or on top of a white fish which gives a zing to the dish. It really is a versatile curry paste.
