There is evidence that chilli peppers have been around as long back as 6,000 years ago or more. It is believed that they were being used as an ingredient in cuisine since 7500BC and actually domesticated in Ecuador within the same time period. The chilli pepper is indigenous to the Americas, but is now used and sold in every continent on the planet.

There is mystery surrounding how the chilli pepper turned up in Asia, with the common perception that the Spanish brought the spicy vegetable to Asia during the colonisation in the 16th and 17th centuries. During this time, the chilli pepper was introduced to Asian countries such as China, Korea, India, Japan and the Philippines.

Large red chillies/peppers are surprisingly mild when compared to smaller varieties. Some people seldom understand that small chillies are much spicier than the larger varieties. Thailand enjoys a wide range of chilli pepper varieties that are grown in the country and available to buy on local Thai markets and supermarkets.

Chillies in Thailand are also used in many diverse manners, from a raw ingredient in most famous Thai dishes, to being ground down and then used in a variety of curry powders and chilli pastes. The chilli pastes are especially tasty when used to create a wide range of Thai curries that we enjoy consuming within the kingdom.

The benefits of large red chillies/peppers is that they are less spicier than the small red chillies that are more commonly used in Thai cooking, which means that more people are willing to try the dishes with those as ingredients. All varieties of Chilli pepper have become a permanent fixture in not only Thai chef’s kitchens, but also in the kitchens of normal Thai families.
