Thai Curry Paste

These pastes form the main ingredient of nearly every type of Thai curry recipes. Although they are available ready prepared in easy to use reseal-able plastic tubs, you can prepare them at home.

Below is the recipe’s for making green and red curry pastes.

Thai Green Curry Paste Recipe: This is easy to make and you can use it with a variety of other ingredients such as chicken, seafood, other meats, vegetables, tofu etc. Once you have made it, you can put it in a sealed container and store it in your fridge for a couple of weeks.

Green Curry Paste

Ingredients:
1 lemongrass
2 tablespoons of coriander seeds, crushed with a pestle and mortar
2 tablespoons of fish sauce
1 teaspoon of shrimp paste
1 teaspoon of sugar
1-2 green chillies (with the seeds removed)
3 cloves of garlic
1 piece of galangal (about 1.5 inches), peeled and sliced
3-4 kaffir lime leaves
1 cup of fresh coriander
1 tablespoon of dark soy sauce
1/3 cup of coconut milk
1 cup of Thai basil

Method: Process all the ingredients in a food processor. If you want to use it straight away, fry it in a little oil until it gets fragrant. Adjust the taste to suit your taste buds.

 

Thai Red Curry Paste Recipe: This is a spicy Thai curry paste. You can make it less spicy by adding less fresh chillies if you prefer milder dishes. Once you have made it, you can put it in a sealed container and store it in your fridge for a couple of weeks. This paste can also be used in a variety of dishes as with the the green curry paste.

Red Curry Paste

Ingredients:
3 Thai shallots sliced
1 lemongrass
2 tablespoons of coriander seeds, crushed with a pestle and mortar
3 tablespoons of fish sauce
1 teaspoon of shrimp paste
1 teaspoon of sugar
1-3 red chillies
1/4 teaspoon white pepper
1 teaspoon ground cumin
3 cloves of garlic
1 piece of galangal (about 1.5 inches), peeled and sliced
1 kaffir lime leaf
1 1/2 tablespoons of dried chilli powder
1/3 cup of coconut milk

Method: Process all the ingredients in a food processor. If you want to use it straight away, fry it in a little oil until it gets fragrant. Adjust the taste to suit your taste buds.
