When you are looking for Thai ingredients, it is rare that you find all you need in one of the larger supermarket chains. Thai fresh produce section: All the vegetables, herbs and spices you need for your recipe should be in this section. Some of the names might be in Chinese, Indian or some other Asian language, so it would be handy if you had a mental image of what produce you needed. The fruit found in this section will generally taste a lot better to something similar found in a larger supermarket.
Mango tip: When looking for mangoes, search for those with a yellow skin and fresh smell. The flesh should be soft and give way to a little finger pressure. If it is too soft, that means that it is over ripe.
Basil tip: Thai Basil comes in two varieties, sweet and holy. You can tell the holy variety by the purplish, pointed leaves. Sweet Basil has more rounded and green leaves.
Garlic Tip: Try and choose smallish garlic bulbs that are still tight. The smaller the garlic cloves, the stronger the taste. If you choose garlic bulbs that are too large, their taste will be mild and will be overshadowed by other strong tasting Thai ingredients.
Galangal tip: Galangal looks similar to ginger, but it’s skin is whiter. If you do not find the Galangal in the fresh produce section, have a look in the freezer section. This also applies for turmeric.
