The Thai Aubergine, or eggplant as it is sometimes known, is a variety of the Kermit eggplant and comes in a variety of different colours. The round white or green ones are used in Thai cuisine and are approximately the size of a golf ball, while there are also Thai Purple and Thai Yellow. Thai eggplant is known as mak heua yaow and it is an essential ingredient in many curry dishes. When making a red or green curry, the eggplant is cut into quarters and cooked in the curry sauce. They become soft and absorb the sauce and its flavor.

They are also able to be sliced and grilled or lightly stir-fried. In the United States, the Thai eggplant is not always used in Thai restaurants and it is common practice to replace it with the large purple eggplants from the U.S. The Thai eggplant is 1-2 inches in diameter and has a crunchy somewhat bitter flesh. Nam prik is a popular condiment that has Thai eggplant in it. The eggplant can be easily found in any market in Thailand and when purchased it should be refrigerated by being wrapping it in a plastic bag where it will still be fresh for up to a week.

A popular dish is that of tofu and eggplant, where the eggplant is sliced and then cooked lightly in oil with garlic and tofu then added with chillies, sweet basil, and yellow bean sauce. This is a very tasty and popular dish that is often served in restaurants found in the numerous shopping malls in the cities. It is also served by some street vendors who have set up stalls, although it may be a little bit more difficult to find. The eggplant cooked in this way is very palatable and tasty.
