There are 37 species of sugar cane throughout the globe. The cane is native to tropical areas of Asia, and grows in the form of tall and fibrous perennial grass with a thick and dense stem. The sugar cane can grow to heights of six meters in total.
The cane is believed to be cultivated in 110 countries with the largest producer in the world being Brazil, flowed by India. Through the processes of milling and refining, the cane is turned into sugar.
The plant can only be grown in tropical environments within prime growing regions that include Brazil, Bolivia, India, Peru, Colombia, Australia, the Philippines, Ecuador, Cuba, El Salvador and Hawaii.
Sugar cane is used in a variety of culinary ways throughout the world. In the Caribbean, the cane is an ingredient in their local rum spirits. Brazilians also use the cane when distilling their local alcoholic brews. The cane can also be crystallized and eaten as candy, as well as being used as a sweetener in cuisine throughout the world.
Sugar cane is regularly used as an ingredient in Thai cuisine. You will see many street vendors that mash the cane and use it to make a much consumed fruit juice drink at the side of the road. They use a machine that strips the sugar cane and then the contents are added to ice and lime to make the drink.
The cane is used in a variety of Thai dishes such as Crab Roe Relish (nam prik khai pu) and Goong Pan Oi. The sugar cane adds a subtle sweetness to the dishes mentioned and is especially tasty in Goong Pan Oi when mixed with the prawns. When used in the dishes, the sugar cane should be sliced lengthwise into four sticks.
