Sour Curry Soup is a refreshing light dish. Sour Curry Soup or as Thaiís refer to it as Kang Som is the most famous southern Thailand dish. The dish is popular throughout Thailand, especially in the south. A very important ingredient necessary for the dish is the Sour curry paste. The tangy paste is made of pounded red chillies and flavored shrimp paste. The paste contains tamarind. Tamarind gives the soup its sour, authentic taste and the red chillies give the dish its spicy flavour.
Tamarind is not only delicious but eating it is good for your health. Tamarind helps fight vitamin C deficiency, helps lower cholesterol and helps prevent and fight colds. Another benefit of consuming Tamarind is that it contains antioxidants that fight against cancer.
Sour curry soup is a very popular dish in central and southern Thailand. It is now becoming popular among foreigners too. The Southern soup tastes more spicier than the central Thailand version of dish. The central Thailand version of the dish is more sweet and sour.

Fresh fish 600-800g (clean and cut into 2-inch pieces), fresh long bean or any fresh vegetables (cut into pieces), tamarind juice 2-2 1/2 cups (crush dried tamarind with 2 cups of water), fish sauce 3 tbsp
1. 300g of fish, bring to a boil until done, select only meat blend well with 6 tbsp (100g) of Maesri's Kaeng Som curry paste
2. 10 cups of water, bring to a boil, mix curry paste (take from Step 1), stir well, add fresh vegetable and fish
3. Add tamarind juice, fish sauce, sugar as you like the taste should be sour-salty and a little sweet. Cook for a moment
Use a dry and clean spoon, seal lid tightly and refrigerate after opening.
Store in a cool dry place. Avoid direct sunlight.
Ingredients: Dried Red Chilli (39%), Shallot, Salt, Sugar, Tamarind Juice (5%).
