Thai Name: Mamuang Dip

Mangos are eaten all over Thailand, by just about everybody. Indeed, if Thailand had a national fruit, it would be the Mango. They are grown in every region, and depending upon the local climate, crops ripen at different times of the year. This means they are available all year round, and are extremely cheap.

Thai people eat Mango before it is ripe, when it is bitter, when it is semi ripe, still firm and only a little sweet, and when it is fully ripened, full of juice and very sweet.

Green Unripe Mango have a very bitter taste, they are not at all sweet. They are also quite hard and crunchy. They are prepared by simply peeling them and cutting them into strips length ways.

Green Unripe Mango are almost always eaten as a snack food, and usually purchased form street vendors, or pedlars plying their trade along the roadsides, where they are sold ready cut and with a choice of dips.

Green Unripe Mangos are eaten with a variety of homemade dips, there are two main ones that are prepared from very simple ingredients found in every Thai kitchen. The first of these is Prick Glua, which is simply made from salt, sugar and ground chillies. This creates a kind of powder the Green Unripe Mango is dipped into as it is eaten. The second dip is named Nam Pla Wan, and this is made from fish sauce, powdered chilli, yellow sugar and tiny shrimp which have been fried. This produces a thin liquid dip, which is quite fiery, and once again the mango is dipped into it before eating.

Green Unripe Mango are very healthy indeed, they contain almost no sugar content, lots of fibre and are very rich in vitamins B and C.
