Chilli and Garlic Sauce is widely used in China for Sichuan style dishes such as 'Sichuan Prawns', 'Chilli Chicken', and 'Ma Po Tofu' (Beancurd) etc. In the West you can add Amoy Chilli and Garlic Sauce to dishes with Mexican or Caribbean flavour. It can also be used as part of salad dressings, marinades and curries.
