Thai Name: Kra Chai
Tumicini is from the ginger family but is known to be considerably mild when compared to other forms of ginger. The root is known by many names such as Galingale, Chinese Ginger and in the Thai language is known as Kra Chai. The herb was also named Finger root in English, because of the way the rhizome stems from one point like fingers on a hand. This is a hugely beneficial herb that is used for medicinal and culinary purposes.
In China and Southeast Asia, the Tumicini is used from fresh when cooking, but in the western world is usually sold pickled or frozen. When used in a Thai culinary way, Tumicini is an ingredient in virtually all curry pastes and can be finely slices and used in fish curries. Because of its mild yet distinctive taste and aroma, Kra Chai has become a favourite ingredient for Thai Chefs and families. You will find this herb in most Thai kitchens. This vegetable can also be peeled, sliced and used raw in a summer Thai rice dish named khao chae.
