Mung bean noodles, glass noodles, cellophane noodles, dried bean tread, Lunkow bean thread… the names are endless and all refer to the ultra thin translucent noodles, or vermicelli, made from the flour of the green mung bean. Glass vermicelli is a very popular ingredient in Thai cooking and is used in a variety of dishes, from spicy beef, pork or seafood salads to baked crab or prawns. Alternatively it can be flash deep fried to provide a crispy texture for salads or a unique and modernistic garnish.

Quite essentially, these delicate little noodles strongly resemble a cluster of nylon fishing lines! Because of their thinness and tendency to be slippery when cooked, they can be quite difficult to handle, so make sure you have place mats and abundant napkins on the table! So what’s the appeal?
