Kanom Jeen (180g) by Star Lion
Kanom Jeen are Thai style noodles made from rice flour. In Thailand’s earlier history, there were traditionally two different methods of making homemade Khanom Jeen. The most popular variety was called "Bpaeng Muk" and was done by soaking broken grains of fluffy white rice overnight in water, which were then drained very slowly the following morning through a bamboo sieve. The moist rice was then kneaded and rolled by hand into compact balls and boiled in hot water for around 10 minutes.
The next step would see the rice balls pummeled in a large mortar yielding a thick flour paste, which is essentially what the noodles would be shaped from. Once they had been cut into long, thin strips, they would be tossed into a pot of boiling water for five minutes before they were ready to eat. It is in this tradition that the Kanom Jeen rice noodle was both prepared and consumed; not dried like most other variations of rice noodle, but freshly prepared everyday to be eaten the same day, or the next, in order to get the full benefit of its flavor. It is especially lovely with Naam Ngiew curry: a tomato-based ground pork meat curry with spare ribs and bean curd. Kanom Jeen is also traditionally used in Naam Prig: a delicious creamy bean curry with peanuts and coconut milk; and Naam Ya: a fish curry made with coconut milk and various pungent ingredients such as ginger, garlic and kaffir lime, palm sugar and spices.
