As such, large green chilli peppers make for a more diverse cooking ingredient.

Thai cuisine always makes use of the vast variety of chillies that grow in the nation. All assortments of chilli peppers can be found on a normal every day Thai market or supermarket. The chillies, in general, are defined by the regions they grow within and this directly affects the local cuisine in that particular area. The Thais tend to sway more towards the smaller and spicier Thai chillies, as opposed to the large green chilli peppers.
