Rice Flakes 200g by XO
Rice flakes are a variety of pasta or noodle made from a mixture of rice flour and water. Their preparation involves the par boiling of rice grains to get them soft enough to be shaped, thereafter the rice paste is rolled and flattened into flat sheets and left to dry. Once the sheets have completely dried, they are then cut into small squares, rectangles or triangles to form rice flakes!
So how do the Thai use rice flakes? They are most commonly incorporated into fried rice noodle dishes such as Pad Kee Mao: a dish prepared with broad rice noodles, meat or tofu, bean sprouts and various seasonings including chili and basil, giving it a robust and fiery flavor. Rice flakes are also popularly used in Pad Thai (one of Thailand’s national dishes) made from a combination of rice flakes, tamarind juice, eggs, red chili pepper, lime, peanuts, fish sauce, bean sprouts and a choice of either seafood, chicken, beef or tofu.
To prepare rice flakes, pre-soak in warm water for approximately 45-60 minutes or soak in hot water for 6 minutes (for fast preparation). Drain water then the XO rice flakes will be ready for any further cooking.
