The term rice vermicelli, is often used to describe thin rice noodles, much like those popularly eaten by the Chinese, however, it goes by many other names too: In Hokkien, rice vermicelli is known as 'bee hoon,' in Burma, as 'kyar-zun,' in Thailand, as 'sen mee' and in Vietnam, as 'bún.' Rice vermicelli is not to be confused with glass noodles, which are made from Mung bean flour and appear transparent when cooked, whereas rice vermicelli, as its name implies, is made from rice flour and as such turns a whitish colour when cooked.
Wai Wai is the top manufacturer of rice vermicelli noodles in Thailand, which constitute a hugely popular component of the cuisine. They are perhaps most famously used in Mee Krob: a dish of deep fried rice vermicelli and sweet and sour sauce. Rice vermicelli are also commonly used in rice noodle soup and are simply delicious when seasoned with oyster sauce or fish sauce and served with stir fried meat and crispy green vegetables.
