Beef Rendang Noodles Recipe
Beef rendang (rendang daging) is a rich, multi-layered ‘dry’ curry dish, originating from Indonesia and widely consumed and made popular by neighbouring south-east Asian countries such as Malaysia and Singapore. A traditional beef rendang curry is so full of rich, spicy and creamy flavours that it has earned itself the nickname ‘the king of all curries’ and is crowned one of Indonesia’s 6 national dishes.. Now, I bet you’re wondering why the king of all curries is described as dry? That’s not to say rendang lacks moisture, however, compared to the curries most people are used to from Indian, Malaysian and Thai cuisine, rendang requires a lot less moisture and is in fact cooked until the coconut milk evaporates leaving a small residue of sauce to enjoy.
In short, a typical rendang curry is made with beef, coconut milk, a fragrant herb and spice mix, slow cooked and served with rice. So if that’s a rendang curry, what is rendang noodles? Or Beef rendang noodles? Well the truth is, there’s no such thing. Rendang noodles are not a traditional recipe from Indonesia or Malaysia but rather simply, a dish that we’ve put together inspired by the authentic flavours of rendang curry, cooked into a new and delicious way to eat.
Our beef rendang noodles recipe packs just as much flavour as a traditional rendang curry, the only difference is the type of beef we’re using and the addition of the noodles ingredient. Instead of thick beef steak pieces, we’re using minced beef. These are ideal for the quicker cooking process of the recipe. The noodles replace rice and wide noodles have the perfect surface area for the minced beef and residual sauce flavours to stick to.
Rendang curry can be made with home-made curry paste using a range of ingredients but for most people, buying a ready-made rendang curry paste or sauce mix is the most convenient option. For this recipe, we used Nonya Secrets Rendang Curry Mix, a rich and fragrant paste which has proven to be popular. See the full list of ingredients and recipe instructions below. Ingredients:
- 1 Jar Nonya Secrets Rendang Curry Mix
- 10mm Rice Noodles (Sticks)
- 350g Minced Beef
- 2 Tbsp Vegetable Oil
- ½ Onion (Diced)
- 2 Tsp Garlic (Diced)
- 100ml Coconut Milk
- 1 Lime (Juiced)
- Fresh Large Thai Chillies (to garnish)
- Fresh Coriander (to garnish)
- 1 Tsp Salt
Instructions:
- Begin by cooking your rice noodles (rice sticks) according to packet instructions and set aside.
- In a wok, hear 2 Tbsp of vegetable oil and saute the onions and garlic. Follow by adding the minced beef and season with 1 tbsp of salt. Continue stir frying for another 2 minutes or until cooked through.
- Next, add the rendang curry mix and stir to combine, followed by the coconut milk and lime juice. Leave to simmer for 10 minutes.
- While the sauce is simmering, cook the noodles according to the packet instructions, drain then add the cooked noodles to the sauce mixture. Gentle stir the noodles until well combined, taste and add additional salt if necessary.
- Serve the noodles in a plate or bowl and garnish with fresh Thai chillies and coriander.
